Vegan No-Bake Oat Cookies

Vegan No-Bake Oat Cookies

Ingredients
  • ½ cup coconut oil (see note)
  • 2 cups caster sugar
  • ½ cup non-dairy milk
  • 4 tablespoons cocoa
  • Pinch of salt
  • ½ cup peanut butter
  • 2 teaspoons vanilla essence
  • 3 cups rolled oats
  • ¾ cup peanuts (optional)
  • ¾ cup sultanas (optional)
Instructions
  1. Add the coconut oil, sugar, milk, cocoa & salt to a large saucepan (all ingredients will end up in this saucepan)
  2. Bring to a boil & boil rapidly for 1 minute – remove from heat
  3. Stir in peanut butter & vanilla essence until smooth
  4. Add oats, peanuts & sultanas. Mix to combine
  5. Dollop a tablespoon of the mixture onto a baking tray lined with parchment paper
  6. Place in the fridge to cool & set
  7. Once set, move into air tight container & keep in the fridge. Graze at your leisure
Notes
I use deodorised coconut oil because the flavour is very mild
