Spiced Dhal Soup

Ingredients:

Vegetable oil to fry
1 carrot peeled & chopped
2 celery sticks – sliced
1 onion chopped
2 cups of red lentils – rinsed & drained
2.5 teaspoon of crushed ginger
2.5 teaspoon ground cumin
1 teaspoon cayenne pepper
1 teaspoon turmeric
2 litres of vegetable stock
Vegan sour cream to garnish
Freshly chopped coriander to garnish

Method:

Heat oil in a large saucepan and sauté onion, carrot & celery for 5 minutes
Add ginger, cumin, cayenne & turmeric & stir in until fragrant. (30 seconds)
Add lentils & stock. Cover & bring to boil
Reduce heat & dislodge lid so not completely covered and cook for 20 minutes or until lentils are cooked (stir often to avoid lentils sticking to pan)
Garnish with sour cream & fresh coriander.
