Ingredients
  • 2 cups of almonds
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds (pepitas)
  • ¼ cup pine nuts
  • 2 tablespoons chia seeds
  • 3 tablespoons rice malt
  • 1 tablespoon molasses
  • 2 teaspoons ground cinnamon
  • 1 teaspoon minced ginger
Instructions
  1. Preheat oven to 175°C & line a lamington tray (24cmx30cm)
  2. Mix the nuts & seeds in a large bowl
  3. In a separate bowl combine the rice malt, molasses, cinnamon & ginger
  4. Toss the wet mixture through the seed mix to combine & coat well
  5. Spread the mix evenly over the prepared pan & bake for 20 minutes (it will still be wet & sticky to touch)
  6. Place on a cooling rack to cool & solidify
  7. Using a sharp knife, cut into bite sized squares & store in an airtight container
