Clean-Out-the-Vegie-Crisper Curry

Ingredients
  • 2-3 tablespoon sesame oil
  • 1 large onion cut into thin crests
  • 4 teaspoons crushed garlic
  • 1 tablespoon freshly grated ginger
  • 1 small zucchini, diced
  • 1 carrot, peeled & diced
  • 1 -2 tablespoons curry powder (depending on taste)
  • 4 tomatoes, diced
  • 1 green capsicum, sliced
  • 800 ml coconut milk
  • 1 cup vegetable stock
  • Salt & pepper to taste
  • Chilli flakes to serve
Instructions
  1. Heat sesame oil in a large fry pan with high sides
  2. Add onion, garlic, ginger, carrot, zucchini & salt & pepper. Stir frequently until softened – about 5 minutes
  3. Add curry powder, vegetable stock, coconut milk and simmer for 10-15 minutes
  4. Add capsicum & tomatoes and simmer for a further 5 minutes. Do not overcook. (Add extra salt & pepper if needed)
  5. Serve over rice, garnish with chilli flakes
