White Chocolate Mud Cake

Serves a LOT of people! Easy 12 – less if you lash out with bigger slices

It gets better after day 2 & 3!

 

1 cup of vegan margarine

250 g of white vegan chocolate (I used sweet William)

200 ml of water

1 ½ cups of caster sugar

1 ¾ cups plain flour

1 cup self raising flour

½ cup of creamed tofu (or you can use 2 egg equivalent)

½ cup vegan sour cream

1 teaspoon of vanilla essence

 

Icing:

½ cup vegan margarine

125 gram vegan white chocolate (melted)

¾ icing sugar

 

1.     Preheat your oven to 150oC

2.     Heat butter, sugar, chocolate and water in a saucepan & stir over a medium heat until combined

3.     Sift both flours together in large bowl & using electric beaters, beat in chocolate mixture

4.     Add creamed tofu, sour cream & vanilla & continue to mix using electric beaters

5.     Pour mixture into a deep cake tin (it is quite a high sided cake) & cook for 1.5 hours. Check that a skewer comes out clean

6.     Turn onto a cooling rack & allow to cool completely before icing

7.     ICING: Using the electric beaters, cream together vegan margarine, icing sugar & melted chocolate

The icing will do the top & sides generously. Decorate with shaved dark chocolate.

      What a great way to celebrate her 16th birthday…..with a fear free cake. Glad you enjoyed it (it gets better each day – if there is any left over)
